Cape Weligama Announces Exclusive Culinary Collaborations with Renowned London Chefs

30 January 2025 | Colombo, Sri Lanka: Cape Weligama, the reimagined luxury resort on Sri Lanka’s southern coast, is set to host a series of exclusive culinary collaborations this season, bringing together some of London’s most celebrated chefs and mixologists. The initiative highlights the resort’s commitment to honouring Sri Lanka’s rich culinary traditions while introducing global influences.

The series will feature distinguished names in the industry Ryan Chetiyawardana (Mr Lyan), Dominic Fernando, and Cynthia Shanmugalingam each known for their innovative approach to Sri Lankan gastronomy and mixology.

Tipsy High Tea with Mr Lyan kicks off on February 9th where the Award-winning mixologist Ryan Chetiyawardana (Mr Lyan) will reimagine the classic high tea with a curated selection of cocktails featuring Ceylon Arrack, Colombo Gin, and Three Families Cocktail Seasoning a unique collaboration between Dilmah, Rockland, and himself. With accolades including World’s Best Bar, Person of the Decade, and World’s Best Bar Menu, Mr Lyan’s inventive approach promises an afternoon of indulgence, set against the stunning backdrop of the Indian Ocean.

A Chef’s Table Experience with Dominic Fernando takes place in collaboration with the Gourmet Galle Festival on February 15th. Dominic Fernando, the visionary behind London’s acclaimed restaurant Paradise is known for his boundary-pushing take on Sri Lankan cuisine and will present an ingredient-driven menu that challenges conventional expectations while celebrating the island’s bold flavours. This event will also serve as a preview of Open Door Policy, his upcoming Colombo-based concept launching later this year.

Acclaimed chef and author Cynthia Shanmugalingam will conclude the series with an Heirloom Seed Dinner highlighting Sri Lanka’s heirloom ingredients rare vegetables, grains, and traditional recipes reinterpreted for a contemporary dining experience on the 15th of March. Cynthia, whose best-selling cookbook Rambutan has been widely celebrated for its deep dive into Sri Lankan culinary heritage, will bring her expertise to Cape Weligama for a thoughtfully curated evening.

These collaborations reflect Cape Weligama’s ongoing commitment to redefining luxury hospitality by creating immersive culinary experiences that celebrate Sri Lanka’s diverse food culture.
